The Return of Vegan Vednesdays

In the Before Times, I observed Vegan Vednesdays to give an extra push to decreasing my animal product consumption, for the sake of the planet. Even though I don't mind skipping meat too much, Vegan Vednesdays were never easy for me. But you know what, I'm prepared to increasingly lay off dairy to do my part to avoid "a ghastly future of mass extinction, declining health, and climate-disruption upheavals (including looming massive migrations) and resource conflicts this century," as described in a seriously depressing new report . The "massive migrations" warning chokes me a little after I read this horrific NYT piece about migrants in Bosnia. I cannot stop thinking about it, and pondering how ridiculously fortunate a life I lead. Yes, I can forego animal products once a week.  To dive into Vegan Vednesdays, you could try " Creamy Coconut Polenta " (The Colorful Kitchen). Meatless and Jet-Lagged

I arrived back in New Jersey from Singapore yesterday around 6:00am. At the risk of sounding smug, I somehow totally avoided jet lag when I arrived in Singapore, but I was not so lucky coming home. Yesterday was excruciating, and its vegetarian meals were rather sad, I'm afraid. United Airlines' meals were about as delicious as you might expect, which is to say: not at all. I don't want to relive them by elaborating further, but here are the pictures: For lunch I pulled Trader Joe's zucchini noodles out of the freezer. They were fine except that the package did not indicate they needed to be drained after cooking, but they really did, making me wonder in my fog where I went wrong. I ate them with tomato sauce. After my husband generously fulfilled my request to procure groceries for me to cook dinner, I failed to rise to the occasion, and instead ordered veggie tacos from a local restaurant, Miti Miti. Let the Meatless Madness Begin!

Meatless March is on! My plan is for this blog to offer you the vegetarian recipes I'm cooking this month, along with my inevitably witty commentary, but for the next couple days, I'm not actually cooking anything. Because I'm in Singapore. Which has been freaking amazing. Infinity pool at the Marina Bay Sands I'll be home on Sunday, and ready to whip up my own meatless meals for the rest of the month. Meanwhile I'm ordering meatlessly from restaurant menus, and enjoying things like vegetarian noodle dishes and this marvelous cauliflower taco. Cauliflower taco at Super Loco Customs House. I know what you're thinking: you are in Singapore, Jennie, WHY ARE YOU EATING MEXICAN?
