Meatless and Jet-Lagged

I arrived back in New Jersey from Singapore yesterday around 6:00am. At the risk of sounding smug, I somehow totally avoided jet lag when I arrived in Singapore, but I was not so lucky coming home. Yesterday was excruciating, and its vegetarian meals were rather sad, I'm afraid.

United Airlines' meals were about as delicious as you might expect, which is to say: not at all. I don't want to relive them by elaborating further, but here are the pictures:



For lunch I pulled Trader Joe's zucchini noodles out of the freezer. They were fine except that the package did not indicate they needed to be drained after cooking, but they really did, making me wonder in my fog where I went wrong. I ate them with tomato sauce.


After my husband generously fulfilled my request to procure groceries for me to cook dinner, I failed to rise to the occasion, and instead ordered veggie tacos from a local restaurant, Miti Miti. They tasted good but looked so unappetizing that I can't really recommend them.

In short, yesterday was not great from a food or any other standpoint, but today's a new day, people! I have been feeling quite alive since waking at 2:41am! I march meatlessly fo(u)rth, and my next post will be more inspiring, and include a link to a tried-and-true recipe.
