Teriyaki Tofu Bowl

Teriyaki Tofu Bowls made their way meatlessly onto our table tonight, courtesy of the "A Garden For The House/Delicious Living" blog, and they were mighty tasty.



I am never sure how to julienne carrots (does one need a special tool?), so I grated them. It all took me about an hour to put together. Actually I have yet to find a recipe that doesn't take me longer to prepare than claimed.

You could probably cut the sauce in half; it makes much more than you need. And I'll note that it contains plenty of sugar, so it's hard to call it healthy. But no meat!

Not only that, but if you substituted maple syrup for the honey in this dish, it would be vegan. It doesn't contain any dairy. I have been in denial that dairy products aren't innocent when it comes to climate change, but a recent issue of The New York Times' "Climate Fwd" e-newsletter forced me to face facts: "The production of dairy products — including milk, cheese, ice cream and yogurt — contributes about 3.5 percent of global carbon dioxide emissions each year."


Sigh. I mean, I decide to give up all meat products for an entire month, and then I realize that even my cup of hot chocolate is working against me. Well, I'll save my dairy battle for another month (Dairy-Free February has a ring to it, yes?), but I thought you should know. You're welcome. Ha.
